- 2 TBSP of Mayo
- 3 TBSP of Italian Breadcrumbs
- 1TSP of Old Bay
- ½ TSP of Baking Powder
- 1 Egg
- 1 lb of Lump Blue Crab Meat
1. Use Jumbo Lump or Lump Blue crab meat. Drain any liquid from the container, then dump it onto a paper plate to gently check for shells
2. Mix first 5 ingredients in glass bowl and then gently fold in crab meat.
3. Make 4 large or 5 medium or 6 small crab cakes (some people say size matters) with the mixture and place into oiled ½ sheet tray.
4.Refrigerate for at least 10 minutes.
Set your griddle to medium heat (~400)
Oil the griddle liberally. Gently place crab cakes on gridle, flipping after 5 min (10 min total).
Serve, enjoy!
