Todd Toven, one of the Official Blackstone Griddle personalities, makes like 3 different versions of this recipe. What is not to like about corn, bacon and spice? Not a thing. You can add pickled jalapeños for some added spicey kick.

- 2 -12 oz Bag of Frozen Corn or 2 Cans
- ¼ Cup Bacon Bits
- 2 tsbp Fajita Spice
- 1 tsbp of granulated garlic
- 1 tsbp of lime juice
- 1 cup Sour Cream
- 2 tsbp butter for griddling (or you can use bacon grease for extra yum)
1. Microwave the corn according to directions, or drain water from canned corn.
2. In small bowl, mix the sour cream, garlic, and lime juice.
3. Set aside in refrigerator to cool.
Griddle corn and bacon, add fajita spice, flipping after 3 min (6min total). Move to sheet tray. This recipe can be topped with a ton of extra things. Top with the lime crema. Add anything else you desired, like guacamole, maybe some Cheetos of Fritos for crunch, I do!
