Cheesy Breakfast Tacos

This recipe can be customized to be low carb by omitting the tortilla. Filling is also super flexible, add what you wish for your taco, I often add some leftover tater tots smashed up. Cheesy goodness!

Ingredients

  • - 1 lb of Breakfast Sausage

  • - 12 eggs, scrambled

  • - 2 cup of cheddar cheese

  • - 2 cup of mozzarella cheese

  • - 1/2 cup of Bacon Crumbles

  • - 12-16 tortillas (I like small flour)

  • - 1 tsp butter/oil, or as needed for griddling

  • - Hot sauce per preference ( I like the El Yucateco green habanero and chipotle)



Preparation:

  • 1. Scramble eggs into large container.

  • 2. Combine cheeses together to make blend

  • 3. Divide sausage into 8-12 patties

Set your griddle to medium/low heat (~375F). Keep on burner off to establish a cool side for the griddle


Performance

Oil griddle, cook sausage patties, smash for a good sear. 4 minutes per side. Flip. Break into small piece, Add the bacon pieces, let cook for a min. then pour in eggs slowly. After eggs are set in about 90 seconds. Move the eggs to the cool part of the griddle. Place 1/4 to 1/3 cup of cheese blend directly on griddle, add same amount of egg mixture on top. Fold over cheese to make a roll. Add to heated tortilla if desired.
