The chopped cheese sandwich originated in small one-stop shops known as bodega in New York City. A Chopped Cheese is basically a burger turned into a sandwich. It starts with ground beef and onions, which are chopped up while on the grill into small pieces. American Cheese slices are added on top and melted before the mixture is transferred to a sub roll and covered with the toppings of your choosing (I like peppers, lettuce, and tomatoes plus the GMTD Not so secret Sauce) Forghetaboutit!

- 6 sub rolls
- 16 oz of ground beef
- 12 slices of American cheese (2 per sandwich)
- 1 tomato sliced
- 1 onion chopped or strips
- 1 sweet pepper chopped or strips
- Iceberg lettuces, sliced thin into shreds
- 1 Cup of GMTD Not so secret Sauce (optional sauce)
1. 1 Cup of GMTD Not so secret Sauce (optional sauce)
2. Cut sub rolls if necessary and unwrap two pieces of cheese per sandwich
3. Prep GMTD Not so secret Sauce. (I do)
Set your griddle to medium heat (~400F)
Make sure the surface is coated lightly with oil. Spread ground beef out in a thin layer and press down. Add peppers and onion to the other side (I like them separate in strips but if chopped I would do it together with beef) Flip after 4 min, press again, wait 4 min, chop up beef into bits. Add peppers and beef to half sheet tray. Toast sub rolls if desired (try mayo instead of butter for good browning. Construct your sub, I do beef, cheese, onions and pepper on bottom side and special sauce, tomatoes, and lettuce on top. Wrap with butch or parchment paper so flavors can meld for that bodega experience. Also, you can add whatever other toppings you want like hots, pickles, or jalapeno.
