Literally the first thing I cooked for my wife (without the apples). Delicious, rich, French toast, with a hint of tartness from the griddled apples. My wife and three sons all love this one.

- 1 pound loaf of cinnamon raisin bread *approx. 16 slices
- 6 eggs
- 3/4 cup sugar free vanilla creamer (can substitute milk or cream)
- 1 teaspoon vanilla extract
- 1 tablespoon butter, or as needed for griddling
- 5 apples, any variety (I like granny smith and gala)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon butter, or as needed for griddling
- Whisk eggs, creamer, vanilla extract, together in a half sheet tray
- Set your griddle to medium heat (~375 F)
- Core and peel apples
- Slice apples into rings with mandolin slicer to about 1/4 inch thick. Place in half sheet tray
- Sprinkle cinnamon and brown sugar over apples, stir to combine
Place Bread slices in egg mixture and soak, turning to coat, until bread is completely saturated.
Melt butter over griddle over medium heat. Working in batches, cook bread in hot butter until golden, about 3 minutes per side. Transfer toasted bread to a half sheet tray. On other side of griddle place apples, turning occasionally. After 10 min, transfer to half sheet tray.
