Croque Madam is an egg topped, cheesy delight. The ham and cheese are married with a bechamel sauce and egg to give a rich and decadent meal. Bon appétit.

- 4 TBSP Butter
- ¼ C of all-purpose flour
- 1 ½ C of whole milk
- 1 TSP of Dijon mustard
- 8 slices of bread
- 16 oz of ham
- 8 oz of Gruyere or Swiss cheese, shredded
- ¼ C Parmesan cheese, grated
- 4 Eggs
- 2 TSBP of Raspberry Preserves (optional sauce)
- 2 TSBP of Dijon mustard (optional sauce)
1. Melt butter in a medium saucepan over medium heat. Whisk in flour and cook, stirring constantly, for about 3 minutes. Gradually add milk, stirring well until the mixture is smooth. Cook, stirring, until sauce is thickened. Remove from heat and whisk in mustard.
2. Divide ham and shredded cheese into 4 piles each (1 for each sandwich).
3. Whisk mustard and raspberry preserves in a small bowl if desired. (I do).
4. Prep griddle to medium high heat (400 F). Preheat oven to 425° F. Line a baking sheet with parchment paper and set aside.
Make sure surface is coated lightly with butter. Toast all 8 slices of bread on both sides flipping after 2 min. Griddle the 4 eggs to desired consistency. Place griddled bread on baking sheet, spread each bread slice with a layer of béchamel, spreading it all the way to the edges. Top with parmesan cheese. Bake at 425 degrees F for about 5-6 minutes, until cheese is melted. Remove from oven, and place ham and cheese of 4 of the slices. Top with other 4 slices. (Party hint, you can toast 8 more pieces of bread for bottoms and use the bechamel coated slices for tops to make 8 sandwiches instead of 4, also make 8 piles of ham and cheese vice 4). Then turn the oven to broil and broil until the cheese on top is lightly golden, 2-4 minutes. Top each sandwich with griddled egg and raspberry mustard sauce if desired.
