First things first, it is pronounced (ero, like Hero), not gEYErO, which is an abbreviation for gyroscope, used in navigation. Anyway, Gyros are delicious Greek sandwich. Instead of using a traditional vertical rotisserie, we use the griddle to produce a crispy sear on the meat for this awesome sandwich. The sandwich is constructed with a grilled pita, gyro meat, griddle onions, chopped tomatoes, lettuce, and topped with herb laden tzatziki with a dusting of feta cheese. Spectacular.

- 1 cup chopped cucumber
- 5 oz container plain non-fat Greek yogurt/p>
- 1 cup sour cream
- 1 tbsp od Red Wine
- 1 tsp of Lemon Juice
- 1 tbsp chopped fresh dill
- 1 tsp of Lemon Juice
- 1 tsp minced garlic
- Kosher salt and fresh ground black pepper to taste
- 1.5 lbs of meatball mix (or ground meat of your choice, lamb is often used)
- ¼ Cup breadcrumbs
- 2 eggs
- 1 tbsp of Granulated Garlic
- 1 tsp of Onion Powder
- ½ tsp of Salt and Pepper
- ½ tsp of Basil
- ½ tsp of Oregano
- 1 tsp of Lemon Juice
- 2 tbsp Olive oil for griddling
1. Chop cucumber and dill.
2. Stir all ingredients in medium bowl.
3. Set aside and/or refrigerated.
1. Scramble eggs into a small bowl.
2. In large bowl, combine the rest of ingredients and mix with your hands with the eggs.
3. Make small 3 ounce balls.
4. Press balls in thin patties about ¼ inch thick.
Coat griddle with 2 tbsp of olive oil, spreading evenly, add patties. Flip patties after 5 min or until edges are crispy. Flip again and watch carefully for about 5 min. Return to sheet tray.
