This super flavorful recipe is inspired by the Atlanta Grilled Cheese Festival. This is a super flexible recipe in that the first 4 ingredients doubled and baked makes a super dip, also you can use that for filling halved, seeded, fresh jalapeños to make poppers that you can finish in the oven, takes like 30 mins at 400F.

- 4 oz of cream cheese
- 4 oz of shredded mild cheddar cheese
- 2 oz of pickled jalapeño peppers, diced
- 2 oz of bacon crumbles
- 8 slices of white bread
- 4 slices of Sharp Cheddar cheese (1 per sandwich)
- 8 oz of fresh jalapeño peppers, diced
- Mayonnaise for coating the bread
1. Mix the first 4 ingredients together and microwave for 45 seconds, stir.
2. Coat your bread with mayo.
3. Let the batter sit for at least 3-5 min.
Set your griddle to medium heat (~400F)
Place your fresh peppers on the griddle with some oil. Let sauté until soft 5 mins. Divide into 4 equal parts. Toast one side of bread 2 min, then flip add sliced cheese to one piece and spread cheese on the other, top that piece with jalapenos. Flip sliced cheese piece on top of that.
