- 1 Box Complete Pancake Mix (approx. 6 cups)
- 15 Oz of Ricotta Cheese
- 4 Cups Milk
- 2 Egg, Beaten
- 2 TBS of Lemon Zest (the zest of 2 lemons plus the juice)
- 1 TBS Vanilla
- 1 TBS Lemon Juice Concentrate (in addition to the juice above)
- 4 TBS Butter or as needed for griddling
1. Mix ricotta cheese and egg in a medium bowl, then add milk, vanilla, and lemon juice, mix thoroughly.
2. Place pancake mix in a large bowl. Gently whisk in wet ingredients until just combined.
3. Let the batter sit for at least 3-5 min.
Melt butter. Drop ΒΌ cup of batter onto melted butter. Flip after 3 min (8 min total). Place on the cooling rack. This recipe makes about 40 pancakes.
