Go to Asian side, Love the Lo Mein egg noodles, but honestly leftover spaghetti does the trick nicely. Lo Mein is the ultimate add in dish, add whatever veggies or meat you would like to make it a memorable meal.

- 10 oz of Lo Mein Egg noodles cooked and drained (I get mine from Asian section at Weis, Welpac brand)
- 1 pkg Cole Slaw Mix (Cabbage and carrots)
- ½ cup reduced sodium soy sauce
- ¼ cup water
- 1 TBS white sugar
- 1-2 TSP Sriracha or Gochujang
- 1 TSP Sesame Oil
- 1 TSBP Minced Garlic
- 1 TSBP Minced Ginger
- 2 TBS Peanut for griddling (or you can use canola)
1. Whisk the sauce ingredients together in a small bowl. I use a Pyrex 2 cup measuring cup.
Coat griddle with 2 tbsp of peanut oil, spreading evenly, add noodles and slaw mix. Flip everything after 4 min. Cabbage will shrink up significantly, Add sauce and watch carefully about 2-3 min until sauce thickens. Return to sheet tray.
