A tasty cross of an onion ring and cornbread. Delicious with burgers and hot dogs but are fabulous with just about anything. Customize with bacon, cheese, jalapeños, or whatever you like. Enjoy!

- 1 Box Jiffy Corn Muffin Mix
- 1 Cup, onions diced
- 1/3 Cup Milk
- 1 egg, beaten
- ¼ Cup, jalapeños diced (optional)
- 4 TBS butter/oil/bacon grease, or as needed for griddling
- 1 TBS Cream Cheese
- 1 TBS Sour Cream
- 1 TBS Salsa Verde
1. Chop onion into ¼ inch dice.
2. Chop jalapeños into ¼ inch dice.
3. Beat egg in bowl add milk then corn muffin mix, add onions and jalapeños.
4. Stir to combine into a thick batter.
Melt butter. Drop 1 TBS of batter onto melted butter. Flip after 4 min (8 min total). Place on cooling rack.
