Hearty and filling potatoes, with a crispy exterior straight from the griddle. Simple and delicious. You can dress these up anyway you want, sour cream, bacon bits, or whatever you like with your spuds.

- 4 Cups of mashed potatoes (or 3 large baking potatoes)
- 2 Cups of Rice Chex Cereal (Crushed)
- 1 Cup of Cheddar cheese
- ½ Cup of sour cream or plain yogurt
- Butter/Oil as needed for griddling
1. If starting with raw potatoes, peel, boil and mash to make mashed potatoes.
2. Place Rice Chex in plastic bag and crush thoroughly.
3. In a large bowl, combine all ingredients. Mix thoroughly.
4. Form into round flat patties, using a 1/3 cup of mixture per patty. Makes 12-14.
Melt butter or oil. Place patties on the griddle 2 inches apart but on the oil. Flip after 4 minutes per side three times (16 min total) till crust is brown and crisp.
