Potato Patties

Hearty and filling potatoes, with a crispy exterior straight from the griddle. Simple and delicious. You can dress these up anyway you want, sour cream, bacon bits, or whatever you like with your spuds.

Planning:

Ingredients

  • - 4 Cups of mashed potatoes (or 3 large baking potatoes)

  • - 2 Cups of Rice Chex Cereal (Crushed)

  • - 1 Cup of Cheddar cheese

  • - ½ Cup of sour cream or plain yogurt

  • - Butter/Oil as needed for griddling


Preparation:

  • 1. If starting with raw potatoes, peel, boil and mash to make mashed potatoes.

  • 2. Place Rice Chex in plastic bag and crush thoroughly.

  • 3. In a large bowl, combine all ingredients. Mix thoroughly.

  • 4. Form into round flat patties, using a 1/3 cup of mixture per patty. Makes 12-14.

Set your griddle to low medium heat (~375F-400F)


Performance

Melt butter or oil. Place patties on the griddle 2 inches apart but on the oil. Flip after 4 minutes per side three times (16 min total) till crust is brown and crisp.
