Loaded Griddled Potato Soup

Delicious and satisfying comfort food. Rich and creamy like a loaded baked potato in a bowl. Customize with extra bacon, cheese, jalapeños, sour cream or whatever you like. Enjoy!

Planning:

Ingredients

  • - 3 lbs of cooked russet potatoes (or use Yukon gold) cubed

  • - 1 Cup, onions, carrot, and celery diced

  • - 1 TBS of Montreal Chicken Seasoning

  • - ½ lbs of bacon (or two bags of bacon pieces)

  • - 4 TBS butter/oil/bacon grease

  • - 4 Cups Milk or Half and Half

  • - 4 Cups Chicken Stock



Preparation:

  • 1. Chop onion, carrots, and celery into ¼ inch dice.

  • 2. Microwave potatoes, let cool, cube into ½ inch cubes.

Set your griddle to low medium heat (~375F)


Performance

Cook bacon over low medium heat, remove when done leaving drippings, Fry potatoes in bacon grease until golden brown. Place in half sheet tray. Sauté onions, carrot, and celery until soft. Place in half sheet tray. Transfer to 5 qt Dutch oven. Add Stock, bacon, vegetables, and milk. Cook until heated through (10 min). Garnish as desired.
