Runza® started in Lincoln, Nebraska, then expanded throughout the state and into some neighboring states. The original is a yeast based, pizza like dough that I could not get to work on the griddle, so I defaulted to sub rolls☹ Back in the day, every Tuesday in January and February, the temperature at 6 a.m. is the price you'll pay for an Original Runza® Sandwich when you buy medium fries and a drink. Often, it subtracted from the cost of the fries and drink. Runzas can be customized the way you want them with different cheeses and vegetables, but this is OG version.

- 2 lbs of fresh ground beef, I like 80/20 or even a touch leaner
- 1 beef bullion cube, hydrated in 1 C of hot water
- 2 tbsp of Worcestershire Sauce
- 2 tbsp of yellow mustard
- 1 Onion
- ½ head of cabbage
- 2 tbsp butter
1. Hydrate cullion cube or use 1 Cup of beef broth.
2. Dice onion, slice and dice cabbage
Oil the griddle, griddle first the beef for about 8 minutes, flipping to brown. Place onions and butter separately to brown. Then mix in everything together, adding the liquid ingredients. Let simmer till sauce is thick and reduced about 3 mins. Return to sheet tray. Serve on soft, warm buns.
Enjoy!
