A delicacy from Iowa, the Tavern Sandwich (aka Maid-Rite or Loose Meat Sandwich) closely resembles a sloppy joe, without the tomato-based sauce. Featured on the old TV show Roseanne, which was based on a real-life restaurant called Canteen Lunch in the Alley in Ottumwa, Iowa.

- 2 lbs of fresh ground beef, I like 80/20 or even a touch leaner
- 1 beef bullion cube, hydrated in 1 C of hot water
- 2 tbsp of Worcestershire Sauce
- 2 tbsp of yellow mustard
- 1 Onion
- 2 tbsp butter
1. Hydrate cullion cube or use 1 Cup of beef broth.
2. Dice onion.
Oil the griddle, griddle first the beef for about 8 minutes, flipping to brown. Place onions and butter separately to brown. Then mix in everything together, adding the liquid ingredients. Let simmer till sauce is thick and reduced about 3 mins. Return to sheet tray. Serve on soft, warm buns.
