This recipe makes a cozy and tasty meal for two, that I greatly enjoyed with my awesome wife.

- 1 package Steelhead Trout
- 3 Russet Potatoes
- 12 oz package of frozen Brussels Sprouts
- 1 tbsp of granulated garlic or Everything Garlic Seasoning
- 3 or 4 Lemons
- 4 tbsp butter for griddling (or you can use Olive oil)
- Salt and Pepper to taste
1. Using a mandolin slicer, cut the potatoes into 3/8” chips, place in microwavable container with ¼ cup of water. Cook on high for 8 minutes.
2. Cook brussels sprouts in package for 4 minutes on High, drain and slice in half.
3. Slice lemon in half
Set your griddle to medium heat (~400F)
Melt 2 tbsp of butter on griddle, spreading evenly, add potatoes, brussels, trout (skin side up), and cut lemons flat side down. Season everything with the garlic. Flip all but lemons, add salt and pepper, last 2 TBS of butter and squeeze lemons over top. Return to sheet tray.
